Please help. Pretty please. Thoughts? Comments? Recipes? We're starting to get a little overwhelmed - why is it we are overwhelmed with squash and zucchini but NOT overwhelmed with tomatoes? I would like it to be the other way around.

Oh! I just thought of something we used to do with them...I dipped them in a little garlic butter and dredged them with some flour, Italian breadcrumbs and a pinch of garlic salt. They'd be great deep-fried that way, but we just threw them on a grill rubbed with olive oil.
I love zucchini and squash!! My favorite way to prepare them is to cut them length wise into long pieces and then put olive oil, salt, and pepper on them and then grill them. When they are a little floppy and have the grill lines in them, they're ready!
Also, with the squash, you can make really yummy mac and cheese with it. I don't know an exact recipe, but basically steam some squash and throw it (while it's still hot) into a food processor along with cheddar cheese, milk, ricotta cheese, salt, pepper, and butter. YUM!
I like to make zucchini parmesan with ours and sometimes I throw some squash in as well, yum. If you want the recipe, email me. I also love making chocolate zucchini cake and bread.

Hmmm...could you roast thin slices and make "chips". Kosher salt makes everything taste yummy.
